150g of rump steak
1 x small baking potato, cut into thick chips
1/3 pack of green beans
1/2 small garlic clove, finely chopped
4 tsp butter, at room temperature
2 tbsp olive oil
1/2 tsp lemon juice
1/4 tsp fresh parsley, finely chopped

1. Mash 3 tsp butter, 1/2 tsp lemon juice and parsley in a bowl until blended. Roll into a ball, wrap in cling film and lightly flatten it into a thick coin shape with the palm of your hand. Refrigerate until needed.
2. Parboil the potato chips in lightly salted boiling water for 5-6 minutes. Drain well and transfer to an ovenproof dish, drizzle with 1 tbsp oil. Season with salt and pepper and toss the chips to make sure they are evenly coated. Bake for 15-20 minutes, turning once.
3. Meanwhile, heat 1 tbsp oil in a frying pan or griddle pan and season the steak with salt and pepper. Fry for 3-4 minutes on each side, for medium rare, or until it is cooked to your liking. Remove the steak, cover with foil and rest for 5 minutes.
4. Cook the green beans in boiling water for 4-5 minutes, or until tender. Drain and add 1 tsp butter and the lemon juice and toss to evenly coat the green beans.
5. Serve the steak topped with the herb butter alongside the chips and green beans.
