Single-serve Microwave Mug Cake

Single-serve raspberry and white chocolate microwave mug cake

Ingredients

• – 1 tsp butter/margarine
• – some raspberries (enough to cover the base of your mug)
• – 1 egg
• – 3 heaped tsp self-raising flour
• – 4-5 tsp sugar/sweetener (to taste)
• – 1 tsp ground almonds
• – at least 1 tbsp white chocolate chips (though they’re technically optional i guess)

Instructions

STEP 1:

1. Put the butter and raspberries in the mug and heat in the microwave until the butter is melted and the raspberries are puréed

STEP 2:

2. Add the rest of the ingredients and beat well (if the mixture isn’t thick enough then add a bit more flour)

STEP 3:

3. Heat in the microwave (800w took around 1 minute)- you may need to stop it a few times and then restart it to stop it overflowing
