Egg Free Cookies

Ingredients
- No eggs!
- 12oz self raising flour
- 8oz soft margarine
- 8oz caster sugar
- 2oz dark chocolate drops (or anything else you fancy putting in; smarties, white chocolate drops, raisins etc.)
Method
1 - mix the ingerdients together in a big bowl, use your hands to knead the dough, it shouldn't be at all crumbly, so add a little more margarine if it is.
2 - take a small ball of dough, about the size of 1 and a half ping pong balls and squeeze it so it's a circle about 1.5cm thick
3 - place on a greased tray.
You can make between 16 - 22 cookies, so use 2 trays.
4 - cook in an oven preheated to 180 degrees for about 15 mins.
5 - eat them while they're hot! Taste magic with a glass of milk :)

Ran out of eggs! Made these but added a tsp of peanut butter and white choc chunks...Amazing! I halved the mixture quantity and made 8 big ones, cooked for 17 mins.

Great recipe. Made a couple of variations on it and it's done really well.
Have tried it with dried fruit instead of chocolat, with a little brown sugar replacing the caster, and a hint of cinnamon. Then this morning, added 2tsp (very mild) ginger, then rolled the balled up dough in demerara sugar before flattening the ball quite thinly. Came out lovely and crunchy around the edges.
Very versatile recipe, and so easy to jazz up.

Just made them and i put smarties and i chopped up a wispa bar and i put that in it.......I kinda put 12 big balls of dough on the tray and it kinda expanded into a giant cookie.......Its soooooooooooo cool.....Its amazingly delicious!!!!!! Only eating it now!!!
