1 butternut squash
1 onion
1 red pepper
2 vegetable stock cubes
chili powder
salt and pepper
1. Peel and chop the butternut squash into cubes
2. Peel and chop the onion
3. Chop the red pepper
4. Put all 3 ingredients into a biggish pan
5. Boil the kettle and pour hot water into a jug
6. Mix in the stock cubes and sprinkle as much chili powder as desired (salt and pepper to season)
7. Pour into the pan of ingredients and bring to boil
8. Let it simmer for about half an hour on a medium heat (or until butternut squash is soft)
9. Using a hand held blender, mix together to form a smooth thickish soup
10. Enjoy!
