Hearty Beef Stew

There is nothing like a stew to warm you up on a cold winters day



  • 250g minced beef
  • 2 carrots, chopped
  • 1 large onion
  • 1/4 swede, cut into chunks
  • 1 medium potatoes, cut into chunks
  • 1 can of chopped tomatoes
  • 100ml beef stock
  • 2 tsp. Thyme
  • lots of pepper
  • drizzle of oil
  • serves 2-3


1) chuck all the vegetables and the mince in together with the oil and fry for 10 minutes. Season the meat with pepper and thyme.

2) add the chopped tomatoes and beef stock, and allow to simmer for 45 mintues on a medium heat or until the vegetables are cooked -

serve with a bit of bread, rice or steamed green vegetables.
