Step 1:

  • Warm a pan over a medium-low flame. When the pan is hot, add a little olive oil and the potatoes. Sprinkle with salt and pepper. Fry potatoes, stirring occasionally, until cooked through but firm, about 15-20 minutes.

  • while the potatoes are cooking, prepare the salsa. Combine the tomatoes, corn, green onions, and lime juice. Add salt to taste and set aside.

  • when the potatoes are done, remove from heat and set aside.

  • reduce heat to low and add the whisked eggs. Move around until the eggs have set.

  • heat tortillas, either in microwave or flame. Serve with cheese added on top and any other toppings you’d like 🙂
