Chicken Stir Fry

Chicken stir fry with a twist!



  • Serves 1
  • 1 Chicken breast - diced
  • 3 baby sweetcorn - sliced
  • 3 mushrooms - sliced
  • 1/2 red pepper - sliced
  • 1/2 tin of tomatoes
  • 1/2 onion - chopped
  • Cajun spice
  • Noodles


Put oil in the frying pan.

Once hot add chopped onions to the pan and fry until soft. Add the chicken and brown.

Add cajun spice and mix with the chicken.

Add the 1/2 tin of tomatoes to the chicken, mix.

Add the red pepper, mushrooms and baby sweetcorn.

Add more cajun spice, adjust to taste.

Boil water for noodles, won't take long to cook noodles 2-3 mins and once cooked add to the stir fry.

Absolutely delicious with a kick!
