Chicken Stir Fry With Cous Cous.

Chicken, Peppers, Onion & Cous cous. 15mins dish!

Ingredients

  • 1 Pepper (Red, Green or Amber)
  • 1 Red Onion
  • 1 Chicken Breast
  • Oil (Toasted Sesame Oil is the healthy/tasty option)
  • Mini Corn on the cobs! (Optional. Adds more flavour/texture)
  • Olives
  • Sun dried tomatoes
  • Cous Cous

Method

Heat up a hob on the oven, so its hot when you've finished preparing everything!

Cut up the onion and pepper into small pieces, and keep on a plate.

......Now boil a kettle, put a serving of cous cous into a bowl, cover with the boiling water, a few mm above the cous cous is enough, and cover with a plate....

Cut up the chicken breast into little strips, and place in a hot pan with a little oil...

Once the chicken is white all over (Approx. 5mins frying), add in the chopped onion & pepper, and a little more oil.

Keep stirring everything around, so its evenly cooked.

(Leave to fry for a minute if you're gonna chop up mini corn on the cobs. Then throw them in!)

Keep all this frying for another 5mins, then add sun dried tomatoes and olives (pitted!).

Keep frying for another few minutes whilst you check the cous cous, which should be done at this point.

Put the cous cous on your plate, then put your stir fry next to it.

All in all, this dish takes just 15mins to make. and its healthy and tasty to!

I usually make a bit more, and keep it in the fridge ready for when I get in after a night out.
