This recipe is perfect for a hangover cure after a heavy night clubbing!
Pre-heat oven to 180/200 degrees C
Slice a pouch into each chicken breast
Stuff with sliced mozzarella or sliced stilton
Securely wrap 2 or 3 rashers of smoked bacon firmly around each chicken breast, make sure you join the two ends of the bacon together on the top of the chicken breast to stop it from opening.
Place in glass pyrex dish and cover with foil
Bang it in the oven for between 25 - 35 minutes (make sure it is cooked all the way through before serving)
Cook your oven chips/fries
Plate up salad (works well with a rocket salad)
Plate up
Eat
Your cured!

This was a very helpful recipe for my cooking lesson i will recommened it to anyone who wants to try this delicous dish.
Made this before amazing! Just prepped it for tea tonight cooking for bf, goes really nice with pasta in a mushroom sauce too :)
Just made this with my girlfriend using 4 rashers of bacon and mediterranean style red peppers and onions with garlic wedges and reggae reggae sauce on the top, best meal i've eaten in a long time! It goes down even better with a cold fosters by the way!
Hay jordan.... Try it with chicken drum sticks, but boil the drum stick first before bangging in in tha oven, untill hole chikin is white not pinky stuff, then bake it for a good 20 to 30 and then grill each side sprinking cheese onit lol

Took a lot longer than the recipe to cook. I opened up one of the chicken breasts after 30mins and it was still raw. Anyone any idea where i went wrong?

Just made it and have popped it in the fridge ready to cook for tea tonight. Its the first time i've made it so fingers crossed it will be ok lol. Oh and i have used a mature cheddar inside :-)

Very nice recipe. Instead of slicing the cheese, i would recommend cutting it into very messy and small chunks that vary slightly in size. Makes the filling a lot more free and with room to melt and fill more of the chicken.
