1) Mix flour, ground pepper and chilli powder.
2) Coat chicken entirely with flour mixture.
3) Heat oil until very hot, but not smoking, fry chicken pieces for 5 minutes turning regularly to ensure they don't burn.
4) When cooked, remove from pan and place on kitchen paper to get rid of any excess oil.
Serve with sweetcorn and mashed potato for a proper creole dinnner!
