Lemon and Rosemary Chicken

Ingredients

  • 2 x Chicken Breasts
  • Fresh Green Salad
  • Honey
  • Rosemary
  • 1 clove of Garlic
  • 2 x lemons

Method

First all of, take your two chicken breasts for marinading, add the juice from the lemons to the marinade, great some of the lemon zest also.

Add one chopped clove of garlic, roughly sliced. Add some rosemary. Add a tablespoon of honey.Mix the chicken with all of the ingredients and leave as long as possible to marinade.Take a frying pan and make sure it is very hot, add a little olive oil and fry the breasts in the pan, adding all of the goodness and juice from the marinade. Once the breasts are almost cooked, add a large knob of butter so that the sauce thickens and add another teaspoon of honey to the pan. Take the breasts out and leave the sauce in the pan to reduce and thicken. Cut the chicken breasts and place them on a fresh green salad. Once the sauce has reduced and thickened, then pour it over the chicken. Yum!!
