Mexican Chicken Rice

Ingredients

  • 1. Rice
  • 2. Chicken breast fillets
  • 3. Kidney beans
  • 4. Sweetcorn
  • 5. Peas
  • 6. Chilli peppers
  • 7. Eggs
  • 8. Prawns (optional)
  • 9. Peppers
  • 10.Red onion
  • 11. Oil
  • optional (for marinading chicken, you do not need to use all of them, these ingredients just make the chicken taste better)
  • -salt
  • -white or ground pepper
  • - chilli powder (depending on how spicy you like your food)
  • -garlic (fresh or granulated)
  • -a little bit of curry powder
  • -soy sauce
  • -time
  • -basil
  • -paprika
  • you can use any other mixed spices etc to give it extra flavour.

Method

1. Boil the rice (usually takes about 15-20 mins)

2. Slice chicken breasts into small squares and add the herbs to marinade

3. Fry the chicken on medium heat until brown

4. Meanwhile, take some eggs (ideally 2 or 3) and make a scrambled egg in a separate frying pan. You can add a bit of milk to make it more fluffy. Once ready, put it aside, ready to use later

5. Once the chicken is brown, add prawns if you're using any

6. Add all the vegetables and fry until they are nice and soft

7. Once the rice is cooked and the vegetables are soft, add rice to the frying pan

8. Add scrambled egg and stir

9. You can add some chilli powder and soy sauce, all depends on how spicy you like your food

10. You can grate some cheese over the top for some extra flavour and serve! :)
