Turkey Meatloaf

You can use turkey or chicken mince



  • 500 grams minced turkey (£2 in sainsbury's)
  • 1 finely chopped onion
  • 2 cloves garlic or garlic granules.
  • 1 finely chopped carrot
  • 1/2 red pepper finely chopped
  • 1 cup breadcrumbs or 2 tablespoons self raising flour
  • 1 egg
  • 1 tablespoon tomato puree mixed with 1 tablespoon water.
  • 1-2 teaspoon of salt & pepper


Fry the onion, carrot & pepper with the garlic

take off the heat and allow to cool for a few minutes before mixing in the minced turkey.

add the flour/breadcrumbs and mix thoroughly.

beat the egg, add the tomato puree and mix again then place in a loaf tin.

cook in a preheated oven at 160-170 degrees until brown - approximately 1 hour.

this also tastes good with minced beef - substitute the red pepper for a green pepper.

serve with potatoes and veg.
