I've just made some with a piece of one of my overgrown courgettes from my allotment (one that had turned into a marrow!) the muffins have turned out really nice, and they are so quick and easy to make! I didn't use the amount of salt and pepper in the recipe as i didn't want a burnt mouth or kidney failure! Just a generous sprinkle of each.I also added a pinch of mustard powder. It's a lovely recipe - thanks for sharing it.
