Squeeze the tomatoes to bring out the flavor and then put everything but the fish in a pan with a tight fitting lid.
Bring the contents of the pan to the boil on the hob while preheating the oven to 180.C (fan oven)
Once the contents of the pan are boiling add the fish and place the pan on the middle shelf of the oven for 15-20 minutes.
Taste the fish and juices, season to taste and serve fish and tomatoes with a little juice.
Certainly one to impress, just find something nice to go with the fish and tomatoes.
