-preheat the oven to 200
-put the rice on to boil.
-while its boiling fry up your bacon and chop it into small pieces and leave to one side.
-add to a frying pan your green beans, red onion, mushrooms and mixed peppers and fry until soft.
-once the rice is done, drain it and put into a bowl, then add the seasoning and the fryed veg and a drop of BBQ marinade and mix.
-once the its all mixed in, take the aubergines and half them, scoop out all of the inside part to make a nice boat.
-fill the aubergine boats with the mix and sprinkle over the cheese.
-put in the oven and cook for about half an hour or until the cheese is browning.
