Preheat oven to 180 C. Butterfly cut the chicken, place between two sheets of greasproof paper and beat the sh*t out of it with a rolling pin until it flattens out. Cut up the pepper into small pieces and mix with the cream cheese. Place on the chicken breast, then roll up the chicken breast to enclose the cream cheese mixture. Wrap each chicken breast with 1 rasher of bacon, then brush each with 1 tsp maple syrup and 1 tsp melted butter. Bake in the oven for about half an hour or until cooked.
