Almond Omelette

  • 3 eggs
  • 12 chopped almonds
  • a handful of chopped spinach
  • 1 tablespoon of chopped tomato
  • 1 tablespoon of chopped red onion
  • 1 tablespoon of chopped cilantro
  • avocado
  • feta cheese
  • a hint of oregano
  • a hint of salt
  • a hint of pepper
  • 1 teaspoon of olive oil
  • optional: whole wheat pita bead


Take a large bowl and break the eggs in it and whisk them

carefully chop the almonds, spinach, tomato, red onion, and cilantro and add them to the large bowl with the egg

add the salt, pepper, and oregano

mix all the ingredients well

add a teaspoon of olive oil to a pan

when the olive oil is warm enough add the mixture to the pan

once the omelette is ready top it off with sliced avocado and feta cheese

if you'd like, you can accompany this with whole wheat pita bread for a complete and satisfying dish
