I tend to use one egg per sandwich. I only make one at a time as i take one sandwich to work for lunch.
boil eggs, i like to boil them for 10 minutes, but if you want them a bit runny then take off a few minutes.
in a bowl, mash egg with a fork, add half a teaspoon of curry powder and some salt and pepper and mix.
butter bread and pour on curried egg mixture.
it can be a bit messy to eat as the egg may fall out while eating, but i find if i make it the night before then chill in the fridge overnight that it hardens up and isn't as messy.
this is also a good lunch idea because you can boil all the eggs for the week in one go and leave them in the fridge in their shells then use them through the week as you like.
