Cook onion and garlic in a little oil in a frypan. When translucent, remove into a bowl.
add some more oil and cook turkey mince, stirring till brown.
add curry powder, salt and pepper to taste and stir.
add onion and garlic back into the pan and stir
crack each egg straight into the frypan, breaking each one up with your wooden spoon and stirring though for a few minutes.
add some mixed herbs, or whatever herbs you like, dried or fresh.
this would be great with rice but i didn't have any so i just ate it on its own.
you could also add fresh vegies or spinach.
made this up thinking it'd be horrible, but it worked really well.
