Lazy Tuna Rice Salad

microwave dinner for one, reasonably healthy, minimal prep / Serves: 1


  • 1 cup (200g / 7 oz) cooked rice
  • 95g (5 oz) tinned tuna
  • 1/2 cup (25g / 1 oz) onion
  • 125g (4 oz) tinned corn
  • 1 clove minced garlic (or to taste)
  • salt & pepper
  • sprinkle of chives (fresh or dried)
  • 1/4 cup (60g / 2 oz) grated cheese
  • 1 Tbsp butter (or to taste)


Drain tinned foods.

If using fresh onion, dice/ slice roughly. If using frozen onion just chuck it in.

Mix everything together in a microwave safe bowl, cook on high for 1 minute.

Stir, continue cooking for one minute intervals until butter and cheese are melted and food is warmed to your satisfaction.

Note 1: use whatever rice you prefer or have on hand: brown, white, leftover, instant, or make fresh rice (but if you can be bothered with that, why are you reading this recipe?)

Note 2: use whatever type of tuna you like; if it's packed in brine omit the salt. Likewise with salted butter.
