Spicy Ricey Mexican Chicken

A quick cheap and easy mexican meal for one.

Ingredients

  • 1 Chicken Breast (cut into 1cm slices)
  • 1 Packet of mexican style microwave rice
  • 1 tbs of chilli powder
  • 25ml water
  • 1 tbs Oil
  • 1 tbs tomato and chilli sauce.
  • Salt and Pepper
  • Grated Cheese (optional)
  • Soured Cream (optional)
  • Lime Juice (optional)

Method

1 Put Rice in micrwave and cook according to instructions

2 place chicken in a hot frying pan with the oil and fry for 1-2 minutes turning often.

3 add chilli powder, salt and pepper and fry for a further 2 minutes.

4 add the water and turn the chicken, then leave for the water to evaporate (this makes sure the flavouring has evenly coated the chicken and not stuck to different parts)

5 add the sauce and stir for 30 seconds so that it heats up.

6 put the rice on a plate and place the chicken on top.

7 add the grated cheese, soured cream or lime jusice if you wish.

8 enjoy :)
