Pretty fast potato based dish that's a good way to eat some vegetables.
Basically microwave your potatoes for 6/7 minutes.
Cut in half and scoop out the potato insides, put the skins on a baking tray and place all the insides in a bowl.
Add whatever you like really, I like a tuna & mayonnaise with cheese combo, but it's also nice to mush up a carrot and add that or anything really. Be creative.
Spoon mixture back into skins, top with cheese/pepper/other seasoning, bung in an oven at about 200 degrees C for 10 minutes.
