Creamy Tomato Mushrooms

Quick veggie dish

Ingredients

• About 200g of mushrooms
• 3 tomatoes
• 25g of grated cheese
• large dollop of creme fraiche
• garlic clove
• small red onion
• 100g spinach

Instructions

STEP 1:

1. Chop the tomatoes, onion and garlic. Slice the mushrooms.

STEP 2:

2. Heat the pan on high and then cook the onion for 1 minute. Add the garlic and the mushrooms cook until the mushrooms are soft.

STEP 3:

3. Add the tomatoes and spinach. Stir it all together.

STEP 4:

4. Stir in the creme fraiche and cheese.

STEP 5:

5. Serve on toast
