Set the oven to 160'c (gas mark 3)
Sift the two flours and the cinnamon into a large bowl
In a separate bowl, mix butter and sugar until smooth
Add the egg and mix well
Stir in the dry ingredients and mix into a firm dough
Lift onto a lightly floured board and knead well until smooth
Roll to 5mm thickness
Cut into shapes and place onto a greased oven tray
Bake in the preheated oven until the biscuits are a light golden colour (about 10-15 mins)
Let the biscuits cool and harden on a wire rack
they'll make you feel all christmasy inside!
