1. Seive flour and sugar in bowl
2. Beat eggs and milk together
3. Add milk and egg to flour and sugar and add zest
4. Whisk together until smooth
5. Pour a ladle of mixture on to hot pan & cook until sizzling at edges.
6. Flip with a fish slice/spatula
7. Serve with lemon , sugar or whatever you like :)
