Fruit Flan

Sponge based, small



  • 2 eggs
  • 50g sugar
  • 50g Plain Flour
  • 100ml Double/Whipping Cream
  • Small tin fruit or
  • Fresh Fruit


Whisk the sugar and eggs together.

Fold in flour. Make sure you sift the flour twice before folding in.

When there is no flour showing and is all thick, pour into a round tin.

Cook for 10 mins

Take it out and put your chosen fruit on top.

Pour glaze over the fruit.

To make the glaze:

2 tsp of Arrowroot

1/4 pt liquid; either the juice from the tin of fruit or water.

Cook on heat until thick and gloopy.

If you want to colour it, put in some food colouring (it doesn't have any taste so won't affect you flan).

Then pour over fruit.

    You can whip the cream and use it for decoration, bit late now but oh well! ;)
