Published Saturday, 10 May, 2014 by Victoria @

Deliciously light yet oh so simple tray bake! fluffy, quick and tastes divine.

  • Cake-
  • • 100g muscovado sugar - use a light brown sugar if you don't have any
  • • 200g butter
  • • 200g self raising flour
  • • 2 eggs
  • • 2 heaped tbsp golden syrup
  • buttercream topping-
  • • 60g butter
  • • 120g icing sugar

• combine together the sugar with softened butter, until creamy

• add the eggs mixing thoroughly

• stir in the golden syrup

• sift in the flour and bring everything together, either with good hand mixing or an electric whisk

• pour the mixture into a well greased tray - a roasting dish will double up if nothing else suitable!

• put into a preheated 180c oven for about 25 minutes, or until golden, risen and a skewer inserted in the centre comes out clean.

• turn out and allow to cool

• i like to top mine with a buttercream, and then you can add any decoration too!

• use an electric whisk to combine the 60g butter with 120g icing sugar until a creamy paste

• once the cake is cool, spread the icing on, cut into squares, and decorate how you please!

enjoy with a nice cuppa tea! Mmm!
