*Lemon Cheesecake*

lemony luxury!



  • 5 digestive biscuits 70g 4 tbsp of greek yogurt blueberries or any other fruit you like
  • 50g of butter 6 tbsp lemon curd or even lemon zest.
  • 1 tsp lemon juice and you can also you icing sugar to
  • 125ml double cream dust!


1.crush the biscuits- place the biscuits in a fastened bag and bash with rolling pin or similier.

2.melt the butter in microwave or saucepan- and stir the butter into the crumbs of the biscuits. the biscuit mix into the bottom of ramakins or flat-bottomed tins (NOT TO WIDE)and place in fridge to set till needed for the topping. make the topping you must put the yogurt,lemon curd, and lemon juice into a bowl and mix till smooth. a smaller bowl whip the cream until floppy peaks you can use electric beaters (BUT DONT OVERBEAT).

6.Fold in the cream- mix 2 tablespoons of the whipped cream into the lemo yoghurt mix, then fold in the whipped cream left.

7.spoon over biscuit base and chill in fridge for 30 mins to ready to serve you may like to place fruit on top and dust the fruit with a little icing sugar or you could use lemon zest!

    stir 400g cream cheese with 300ml double cream then add 150g icing sugar and juice from 3 lemons it should be a thick creamy consistency, separately crush 200g digestive biscuits and stir with 100g melted butter
    spoon the biscuit mix into a cake tin with a removable base, use a spatula to flatten in down, then spoon on the lemon topping and leave in the fridge overnight, still tastes great if left for 3 days enjoy!
