Expresso Vegetable And Salmon Risotto

The microwaveable expresso vegetable medley risotto is a easy and delicious meal.

Ingredients

  • • 1 riso gallo risotto vegetable medley pack
  • • 100ml of water
  • • drizzle of cooking oil
  • • 1 clove garlic, peeled and crushed
  • • 1 red pepper
  • • 1 onion
  • • 2 x 175g/6oz salmon steaks (canned)
  • • parmesan shavings
  • • rocket sprigs for decoration

Method

Heat pan with a drizzle of cooking oil. Cook garlic, onion and red pepper for 2-3 minutes. Add the riso gallo expresso pack with 100ml of water and salmon steaks, cook for 2 minutes on the hob.

alternatively pour 100ml into the pack and place in the microwave for 3 minutes.

serve with parmesan and rocket sprigs.
