Tuna Risotto

cheap & easy to cook using store cupboard ingredients



  • 1 onion, chopped
  • 250g rice
  • 500ml chicken stock
  • 250g frozen mixed vegetables (i often just use peas)
  • 2 tins tuna


Fry the onion in oil, add rice and stir well.

Pour on chicken stock and bring to the boil.

Add vegetables and simmer for 10 minutes.

add tuna and stir well.

    My recipe for Tuna fish risotto uses cooked rice, tuna in oil. Fry onions in the tuna oil, add rice and any veg you have left over, or just a few peas will do. Add the flaked tuna and stir in. At the last minute, crack 2 eggs in and mix in vigorously. Very tasty. The oil from the tuna adds to the flavour. Will serve about 4 from 1 tin (depending on how hungry you are).

    Just made this and it's delicious!
    Didn't have any regular rice, only microwaveable steam packets so i lowered the simmer time to 5 minutes but it turned out ok, a bit watery with no uncooked rice to soak it up.

    Probably around 2-4 servings.
