If using breast then cut into smallish chunks to ensure they cook all the way through)1 cup plain flour1 1/2 tsp Chilli powder1/2 tsp ground pepperEnough oil to fry the chicken in, ideally needs to be enough that the chicken sits in about 1/2 a centimetre of oil. It’s also nice to use butter or a mixture of oil and butter.Instructions Step 1: 1) Mix flour, ground pepper and chilli powder. Step 2: 2) Coat chicken entirely with flour mixture. Step 3: 3) Heat oil until very hot, but not smoking, fry chicken pieces for 5 minutes turning regularly to ensure they don’t burn.
