Step 1: 1) Mix flour, ground pepper and chilli powder.
Step 2: 2) Coat chicken entirely with flour mixture.
Step 3: 3) Heat oil until very hot, but not smoking, fry chicken pieces for 5 minutes turning regularly to ensure they don’t burn.
Step 4: 4) When cooked, remove from pan and place on kitchen paper to get rid of any excess oil.
Step 6: Serve with sweetcorn and mashed potato for a proper creole dinnner!
