Step 1:

  • 1) Mix flour, ground pepper and chilli powder.
  • Step 2:

  • 2) Coat chicken entirely with flour mixture.
  • Step 3:

  • 3) Heat oil until very hot, but not smoking, fry chicken pieces for 5 minutes turning regularly to ensure they don’t burn.
  • Step 4:

  • 4) When cooked, remove from pan and place on kitchen paper to get rid of any excess oil.

  • Serve with sweetcorn and mashed potato for a proper creole dinnner!
