Step 1:

  • put the rice, with the the lemon rind and juice and the chicken stock on the hob and leave to cook until done (about 10-15 mins).
  • Step 2:

  • meanwhile fry the chicken in a small pan, turning often for about 5-10 mins.
  • Step 3:

  • once the rice is done, put on a plate with the chicken cut into small pieces.
  • Step 4:

  • serve with salad and enjoy
