  • - Rice (Brown or white, Basmati rice is best)
  • - Mushrooms

Method

Put some rice on to boil and chop up the mushrooms while it's cooking. (Use mushrooms generously as they shrink when cooked, I always find I haven't added enough mushrooms) When chopped up, place in a bowl or plate and cook in the microwave on full power for 3 minutes, no water or butter is needed as mushrooms are fantastic for microwaving! :) When the rice is cooked, add the mushrooms and mix up adding some salt to finish.

    Cool! I hate to use any water or butter, so this is the recipe for me!

    Add garlic butter for extra taste
    And tinned mushrooms are nice too - cheap own brand are fine
    I often do this - for real uxury(!!) fry some miixed peppers and add to the rice and mushrooms and there will be enough juice to make it less dry or bland :)

    could do with some seasoning like chilli or soy sauce to finish or this will be very very bland
