My Mum's Cheap, Delicious Tomato Sauce!

Ingredients

  • - 1 clove of garlic
  • - 1 or 1/2 an onion, to preference
  • - 1 tbsp basil
  • - 1 tbsp mixed herbs (or sprigs of oregano + thyme, etc to substitute)
  • - 1 tsp tomato purée (squirt of ketchup works fine)
  • - (opt.) vegetables of choice/nuts and seeds.
  • - 400/500g chopped can/box of tomatoes
  • - 1 tsp of sugar
  • - 1 tsp veg. Stock powder (substitute salt to taste if necessary)
  • - pepper to taste
  • - pasta/spaghetti

Method

1) chop onion and fry on medium/high heat. Add a teaspoon of sugar over the onions while frying to help caramelize and add flavour. When onions start to golden, add crushed/chopped garlic. Stir for a minute, making sure the garlic does not burn.

2) add the can of chopped tomatoes and about a quarter of a cup of water. Stir.

3)

(i) [opt.] if you want, you can also add any vegetables lying around to the sauce. Chop up some carrots, mushrooms, lentils, courgettes (zucchinis for you americans), seeds etc all work well. Anything goes!

(ii) add basil, mixed herbs, tomato purée/ketchup and stock powder. Taste, stir and cook for about 5 minutes. Bring to a bubble and turn heat down to medium-low to simmer.

4) meanwhile, cook the pasta in a separate pot. Remember to stir sauce regularly while making the pasta so it doesn't stick to the bottom of the pot.

5) serve, add loads of cheese and and pepper to taste!

    Hey Jenny - when the sauce reduces I keep adding water in. Use as much water as you like :)

    Delicious! For extra deliciousness I cooked the noodles 2 minutes shorter than I usually would and added them to the sauce and let that simmer for an additional 2-3 minutes! Thank you for this quick and easy recipe

    Hey Jessica! Glad you liked it,
    You can add courgettes, mushrooms, peppers, lentils, broccoli, spinach, kale etc. Any greens, roots, nuts or seeds work fine, and you add them with your can of chopped tomatoes and water, or after you've fried your onions. Remember to chop the vegetables finely so they cook quicker.

    With 5 kids around, i was sooo glad to find this recipe. I spend way to much on groceries, and pasta is a regular in the house. Kid's loved this. Could someone please give me an example of the vegetables to add in though ? I skipped that bit, last time i made the sauce.
