STEP 1:

set oven to 190’c

STEP 2:

butter
gin
ginger
pork
pork chops
sugar

trim pork chops carefully. mix together salt, perrper, sugar and ginger and rub over chops. heat the butter in a heavy meat tin and add the chops. brown in a moderately hot oven, turning chops once to brown on both sides.

STEP 3:

meanwhile, mix together thoroughly all the ingregients for the bargecue sauce.

STEP 4:

when chops are brown purs off all the fat from the baking tin, pour sauce over and cover with a lid of foil. back for 20 to 30 mins, basting occasionally, until tender. then arrange on a serving dish and spoon sauce over. serves 4
