Chorizo Bean Stew

Ingredients

  • One whole sausage of chorizo (aldi just over £1)
  • garlic
  • onions
  • 2 tins of beans (kidney and black eyed or any other type of bean)
  • 2 tins of tomato
  • mushrooms
  • peppers
  • 1 teaspoon of chilli or to taste
  • 1 teaspoon of cumin or to taste
  • any veg eg. Carrots, tiny potatoes
  • season to taste

Method

Take the skin off the chorizo and chop into smallish pieces

put into a pan and fry gently

add chopped onion, garlic, mushroom, peppers plus spices

add to a slow cooker of cassarole dish

add tinned tomatoes and veg, beans

either put in the oven at 150 for a few hours or put in slow cooker and leave most of the day., taste and season. Nice with a blob of creme fraiche on top.

delicious with crusty bread or leave out the potatoes and serve with pasta.
