Simple Ratatouille

Easy and healthy accompaniment



  • Serves one
  • handful of cherry tomatoes, halved
  • 1/3 of a courgette, sliced
  • 1/2 onion (preferably red)
  • 3 or 4 small potatoes, quartered
  • squirt of balsamic glaze
  • spoonful of horseradish
  • splash of oil
  • you can also add peppers, aubergine and other veg. It goes really nicely with a chicken breast or a couple of fishcakes!


1. Boil the potatoes and when they're nearly done heat the oil in a pan. Begin to fry the onion and courgette.

2. Drain the potatoes and put to one side.

3. Once the onions and courgettes have softened add the tomatoes.

4. Stir in the potatoes, balsamic and horseradish and cook for about 1 minute.
