Yummy thai sweet chilli peanut noodles

82%

Ingredients

  • Instant noodles
  • sweet chilli dipping sauce
  • peanut butter
  • soy sauce
  • optional:
  • egg
  • any veggies you like, fried cucumber, spring onion, pepper (capsicum), celery and sweetcorn are good :)

Method

1) boil the noodles without adding the flavoring (i usually save the packets for making soup)

2) while they're boiling, mix together in a bowl, 1 big tablespoon of peanut butter, half a tablespoon of soy sauce and 1 & 1/2 tablespoons of sweet chilli sauce

3) drain the noodles and mix them in with the sauce mix you made (do it when it's hot so the peanut butter melts into the noodles x3)

variations:

if you like it salty-add more soy sauce, sweet-add more chilli sauce, low-fat- less peanut butter or skip the peanut butter (it still tastes good without :) )

i think it taste more like the real thing if you whisk an egg, make a very thin well-cooked omlette, cut it into small strips and mix it in (or just scrambled egg)

another, more time-consuming way is to do steps 1 to 3, heat a pan, fry some crudited (small strips) vegetables and then, when they're almost cooked, add the noodles in the pan and enjoy some delicious fried noodles! :d
