Chickpea Salad

Tangy chickpea salad

Ingredients

• 1 tin chickpeas
• handful of fresh chopped coriander
• 1 tbsp lemon juice
• 2 tsp olive oil
• 5 cherry tomatoes chopped in half
• 1 red onion thinly sliced
• pinch of black pepper

Instructions

STEP 1:

1) drain the tin of chickpeas and place in salad bowl

STEP 2:

STEP 3:

2) add all of the remaining ingredients

3) toss thoroughly using (clean!) hands
