Whisk the 2 eggs together (in a shallow bowl) with the vanilla essence and the sugar/sweetener....
heat frying pan up and put either a knob of butter, oil or for an healthier option- 1cal frylight spray.
dip 1 slice of bread in sweet batter, then cover the other side of the bread in egg.
place the sweet eggy bread in the frying pan until cooked golden brown on one side. Use a spatula or fish slice to turn it over
once golden brown on either side, take it out the frying pan onto your plate, ready to eat.
do the same with the other piece of bread then dust some icing sugar over them
serve and enjoy (really taste like doughnut!)
this is a good recipe for a whip-me-up breakfast, a snack, and even a hangover cure! Experiment with it and serve it at parties too!
