Take your bread slice, carefully remove the center (and save it!), making sure the crust stays intact.
place the crust in the pan, pressing slightly to make sure there are no gaps under the bread.
crack your egg into the hole in the middle of the crust.
break the yolk and fry for two minutes.
flatten the center of the bread (you cut out earlier)
(optional) top the egg with cheese
place the flattened centre on top of the egg, and flip the entire slice.
continue frying for another 2 minutes.
eat on its own, or use as a layer in an easy,
super-tidy breakfast sandwich!!
