STEP 1:

set oven to 220’c.

cream
jam
sugar
vanilla
vanilla essence

roll pastry out thinly and cut into 2 strips, 3 inches x 12 inches. place on a damp baking tray and bake in a hot oven for 12 mins or until well risen and cooked. allow to cool. mix icing sugar with warm water to a coating consistency, and colour pale pink. turn one pastry slice unpside down and spoon over icing. spread remaining slice with jam, spread cream, flavoured with vanilla essence, over jam. top with iced slice. cut into 8 slices.
