Vegetable Crisps

Published Saturday, 01 August, 2009 by Emma

A healthy alternative to crisps, two ingredients.

  • Carrots / Parsnips / Any root vegetable
  • Little bit of oil

1. Slice the vegetable really thinly (use a potato peeler).

2. Lay them on a baking tray and dress with a bit of oil.

3. Put it in the oven and wait for them to crisp (not sure how long haha i don't time it!)

(NB - They are supposed to shrink)

yummy! i did these with apple, carrot, potato, beetroot and mushrooms, the mushrooms and beetroot sucked but the others were gorgeous! i've always cut mine too thick the using a peeler is a great solution! also bit of salt and pepper on them make a big difference. great recipe!!
