Bacon And Kidney Bean Soup

Delicious, easy and full of flavour winter warmer

Ingredients

  • 1 potato peeled and cubed
  • half a white onion thinly sliced
  • 2-3 rashers of bacon cut into pieces
  • half a tin of kidney beans
  • half a pint of chicken stock (use instant soup mix if you don't have any stock)
  • half a tin of tinned tomatoes
  • a few pieces of broccoli (frozen is fine)
  • 3 spring onions or 1 leek
  • 1 glove of garlic finely chopped or crushed
  • salt
  • black pepper
  • mixed herbs
  • chilli sauce (optional)
  • squeeze of ketchup

Method

1. Soften leeks, garlic,onions in a pan with a teaspoon of oil

2. Cook bacon and add to pan

3. Add stock and seasoning (not ketchup or chilli sauce)

4. Add potatoes and kidney beans then simmer for 20 minutes

5. Add tomatoes, ketchup, chilli sauce and broccoli and simmer for a further 15 minutes.

6. Enjoy with crusty bread, brown rice or alone!
