Put a big pot on the stove
dice and fry the onion, chilli and garlic in oil
once cooked add chopped veg to pot
add hot water to the pot, water should just cover the vegetables
add the stock cube
bring to the boil
once all the veg is soft turn the stove off
blend the soup (if you dont have a blender mash the veg, lumpy soup still tastes great)
now season with salt and pepper (make sure you taste as you go)
now add a dash of cream
the last and most important ingredient is the nutmeg, add this last, stir and serve :)
Warm and filling during winter.
this soup is so addictive, and so simple to make
This soup is great for healthy, hearty eating. use whichever pumpkin you prefer
Don't waste the insides of your pumpkins this year - use them!
