fry squash pepper onion and garlic in a little olive oil for five mins.
add boiling water and stock cubes and a little salt and pepper
simmer for 30 mins
blend in a food processor or use a hand blender
may serve with a dash of cream on the top if desired
If you have a sandwich toaster or a Lean mean grilling machine these work great
spicy soup (4 servings)
A soup made with roasted veg
