Butternut Squash N Red Pepper

a truly delicious soup to impress your mates



  • 1 whole butternut squash peeled deseeded and chopped into rough cubes
  • 1 large onion diced
  • 1 large red pepper chopped
  • 2 cloves garlic crushed
  • 4 chicken oxo cubes
  • salt and pepper to taste
  • 1.7 - 2 litres boiling water


fry squash pepper onion and garlic in a little olive oil for five mins.

add boiling water and stock cubes and a little salt and pepper

simmer for 30 mins

blend in a food processor or use a hand blender

may serve with a dash of cream on the top if desired
