Cabbage, Lentil, Tomato And Carrot Soup

A satisfying, healthy delicious soup.



  • Serves 4-6
  • 1 cabbage, shredded
  • 1 onion, chopped
  • 3 medium-large carrots, chopped
  • 1 clove of garlic, minced
  • 4 cups vegetable stock
  • 3/4 cup red or green lentils
  • ever 1 bell pepper or 2 stalks of celery
  • 1 400g can tinned tomatoes
  • 1 tsp sugar
  • 1 tsp black pepper
  • 1/2 dried thyme
  • 1/2 cumin powder (optional)
  • 1/2 tsp cayenne pepper (optional)


Bring a small pan of water to the boil and add lentils, let simmer 15 minutes, then drain.

in a very large pan bring vegetable stock to the boil and add all vegetables, tinned tomatoes (including the juice) and the tsp of sugar, let it re-boil then turn down heat to simmer for 1 hour and 45 minutes.

mix in herbs and spices combining well.



-serve with a crusty bread if you desire.

-to spice it up, add 2 medium chili peppers and 1/2 tsp more of cayenne pepper.

-fact: cabbage contains more vitamin c than an orange.
