Leek And Potato Soup

Simple and cheap but so tasty / Serves: 2



  • 2 tbsp oil
  • 2 leeks (chopped)
  • 1 small onion
  • 3-5 potato
  • 600ml chicken stock
  • salt and pepper


1) Heat the oil in a pan, add the chopped leek and onion, cook gently for about 7mins stirring occasionally so they don't stick to the bottom of the pan.

2) Add the potato, stirring occasionally for 2-3mins. Add the stock and bring to the boil the reduce the heat. Season with salt and pepper. Simmer for around 30mins.

    Try adding 1 tsp of dried oregano, it's so good :)))
