Lentil Soup

Just like my Mum makes it!

Ingredients

  • 1 stock cube - chicken/vegetable
  • 1 cup full of red lentils
  • 1/2 - 1 turnip
  • 2/3 Carrots
  • 1 onion
  • Turmeric
  • Salt and pepper to taste
  • You can also add potatoes, leeks, parsnips, any other veg you have lying around wanting to be made into awesomeness!
  • I sometimes add some chili powder to give an extra bite! Or even some rice to make it super filling!

Method

Put a pot of hot water on the hob.

Add stock cube and turmeric/chilli powder.

Add lentils.

Whilst bringing this to the boil, dice the turnip, onion, and any other veg going in.

Grate carrot.

Add all ingredients to the pot and allow to cook for at least 30 minutes.

Add any seasoning to taste.

I tend to blend the soup once it is cooked. It is really amazing this way.
